Lard Biscuits
You will need:
2 cups flour – sifted
1 tablespoon Baking Powder
1 teaspoon Salt
¼ cup Lard
¾ cup Milk
Directions:
Preheat oven to 450°
Sift dry ingredients together. Cut in lard until mixture resembles crumbs.
Make a shallow hole in the middle of the flour mixture and gradually add and stir in milk to make a soft dough that leaves the sided of the bowl and sticks to the mixing fork.
Turn onto a lightly floured surface and GENTLE knead with the heel of the hand 12 times. Over kneading roughly will make the biscuits hard and not rise. Roll 1/2" thick.
Cut with a 2 1/2" cutter (If you don't have a biscuit cutter, use a drinking glass dipped in flour.); place close together on a baking sheet for soft sides, 1" apart for crusty sides on ungreased baking sheet. I use parchment paper. Let sit on pan 5 minutes before baking.
Bake for 10-12 minutes. Brush with real butter. Serve at once. Excellent with raw honey or homemade preserves.
TIP: Check the date on your baking powder. Old baking powder will prevent your biscuits from rising properly in the oven to be light & fluffy.
TIP: Always use whole milk or 2% for cooking for best results.
