Lamb Pita Pockets
What You Will Need
2 1/2 cups cooked ground lamb
1 tablespoon olive oil
1 1/2 cups chopped romaine lettuce or fresh spinach
1/4 cup crumbled feta cheese or blue cheese
2 small tomatoes, diced
3 tablespoons Greek salad dressing
4 whole wheat pita rounds, halved and warmed
Yogurt Sauce- You will need:
1 cup PLAIN Greek yogurt
1/3 cup loosely packed fresh mint leaves, finely chopped or 2t dried mint
1/4 cup sour cream
1 garlic clove, crushed or 1T crushed/canned garlic
1 tablespoon lemon juice
1 medium cucumber, peeled, seeded, and chopped
1 teaspoon kosher salt
Stir together yogurt, mint, sour cream, garlic, lemon juice, cucumber, and salt. Serve immediately or chilled. Refrigerate up to 2 days.
How to Make It
Cook lamb in olive oil in a cast iron skillet until done. Drain lamb & set aside. Combine romaine lettuce, feta cheese, tomatoes, and Greek dressing. Divide lamb among pita rounds. Top with lettuce mixture and Yogurt Sauce. Serve & enjoy.
