Prep: Brush a 6-9 lb. Bone-In Leg of Lamb with 2 Tablespoons Olive Oil and 2 Cloves of Minced Garlic. Sprinkle with dried oregano and season with salt and pepper to taste. Roast in a shallow pan at 450 degrees until medium rare (130 degrees internally)--about an hour to an hour and fifteen minutes.
Meal #1: Roast Lamb with Asparagus and Pasta
Steam 1 bunch of asparagus until crisp-tender. Remove and sprinkle with salt, pepper and lemon juice. Cook 1 cup dried pasta (we recommend orzo) in the same water. Toss with a little olive oil, salt and pepper. Serve with 1/3 of the Leg of Lamb.
Meal #2: Gyros with Grilled Veggies
Grill 1 red pepper; 1 onion; 1 zucchini and a handful of cherry tomatoes brushed with olive oil. (A stovetop grill pan works great for this!) This should take about 6 to 7 minutes. Slice up 1/2 of the remaining Leg of Lamb and grill until warmed through. Serve with warm slices of Pita Bread and your favorite tzatziki sauce. This also pairs well with warm couscous and grilled pears.
Meal #3: Slice Lamb with Fresh Salad
Toss your favorite type of salad greens with chopped or diced tomatoes, kalamata olives, bell pepper slices; red onion and cucumber slices. Top with the remaining lamb, which has been warmed up and sliced or chopped, and feta cheese crumbles. We prefer it drizzled with olive oil and seasoned with a pinch of sea salt and cracked black pepper.
The Bone-In Leg of Lamb will provide you with enough meat to create 3 meals large enough for most families. If you are cooking for one or two, the remaining lamb will freeze very well for use in another meal.
