Yummy Honey-Pineapple Pork Chops

EASY HONEY-PINEAPPLE PORK CHOPS

(4) Boneless Pork Chops
(1) small can Crushed Pineapple
1/2 c Raw Clover Honey
1/4 c Pineapple Juice (drained from crushed pineapple)
(1) Tablespoon Prepared Mustard

Cut a small pocket into each chop and stuff with a spoonful of crushed pineapple.  Combine honey, pineapple juice and mustard then spoon over each chop.  Cover and bake at 350 degrees for 45 minutes to 1 hour, drizzling honey sauce over the chops often.  Remove chops from oven and top with a spoonful of crushed pineapple.  Place back in oven, uncovered for 5 minutes to warm the fruit.  Any remaining sauce can be warmed and served with the chops.  Makes 4 servings.

This recipes creates a sweet-tart sauce which is excellent with our pastured, boneless pork chops.  If you want to add a little heat to the recipe, add 1 T Hot Red Pepper Flakes to the sauce.

Recommended Side Dishes:  Salad and Wild Rice.
