The cuts in a Quarter/Split-Side of Beef (225 lbs.) are: 


T-bone Steaks, Rib Eye Steaks, Sirloin Steaks, Minute Steaks, Round Steaks, Flank Steak, Skirt Steak, Tri Tip Steak, Sirloin Tip Roast, Pikes Peak Roast, Chuck Roast, Arm Roast, Rump Roast, Ribs, Brisket, Ground Beef, Stew Meat and Soup Bones.  

You'll get: 110 lbs. of 95% Lean Grass Fed Ground Beef & 105 lbs. of Grass Fed Steaks, Roasts, Briskets, etc.  

Our beef are harvested at 800 lbs. and dry aged for maximum tenderness and flavor!

Liver, Heart and Tongue are optional.  Please specify if you would prefer KC Strips & Filets rather than T-Bone Steaks.
